Pork tenderloin ¾ pound
Juice of 1 lime
Olive oil 2 teaspoons
Ground cumin 1 tablespoon
Ground coriander 1 teaspoon
Salt ¼ teaspoon
Freshly ground pepper to taste
  1. Directions
  2. Preheat oven to 500ºF.
  3. Rub the pork with the lime juice, and then drizzle with the oil. Season all sides of the pork with the cumin, coriander, salt, and pepper.
  4. Roast pork in center of oven for 20 minutes. Remove the pork, tent it with foil, and let it rest 10 minutes before serving.
