Lo mein noodles (or whole wheat linguini) 4 ounces
Canola oil 2 teaspoons
Garlic, minced 2 cloves
Boneless lean pork chops, sliced into 1/2” shreds ½ pound
Broccoli flowerets ½ cup
Small red bell pepper, sliced into ¼” strips 1
Mushrooms, sliced ½ cup
Scallions, sliced 2
Low-sodium soy sauce 2 tablespoons
  1. Directions
  2. Cook noodles according to package directions, omitting salt and fat. Drain and set aside.
  3. Heat oil in a medium skillet or wok over medium-high heat. Add garlic cloves and cook for 1-2 minutes, until garlic is tender. Stir in pork and cook 2-3 minutes, until it begins to brown. Stir in broccoli, pepper, mushrooms, and scallions, and continue cooking for 6-8 minutes, until vegetables are tender and pork is cooked through.
  4. Turn off heat, add soy sauce, and toss with noodles. Serve immediately.
