Beef tenderloin filets2 (5-ounce)
Salt¼ + 1/8 teaspoon
Pepper to taste
Fresh lime juice1 teaspoon
Olive oil1 ½ + 2 teaspoons
Baby greens2 cups

  2. Slice each filet horizontally into three equal pieces and season with ¼ teaspoon salt and pepper to taste.
  3. Whisk together lime juice, 1 ½ teaspoons olive oil, 1/8 teaspoon salt, and pepper to taste. Toss with the greens. Transfer salad to two plates.
  4. Heat 2 teaspoons olive oil in a medium to large skillet over medium-high heat. Add meat and cook for 1-2 minutes on each side, depending on desired degree of doneness. Serve over or along side salad.
