Water3 cups
Smoked turkey breast, skinless¼ pound
Hot pepper, freshly chopped1 tablespoon
Cayenne pepper¼ teaspoon
Cloves, ground¼ teaspoon
Garlic, crushed2 cloves
Thyme½ teaspoon
Scallion, chopped1 stalk
Ginger, ground1 teaspoon
Onion, chopped¼ cup
Greens (mustard, turnip, collard, kale, or mixture)2 pounds

Tip: Use a small amount of skinless smoked turkey breast instead of fatback to lower the fat content but keep the taste.

  1. Directions
  2. Place all ingredients except greens into large saucepan and bring to a boil.
  3. Prepare greens by washing thoroughly and removing stems.
  4. Tear or slice leaves into bite-size pieces.
  5. Add greens to turkey stock. Cook 20-30 minutes until tender.
