Very Lemony Chicken

Ingredients and Preparation    TOP

Chicken breast, skinned and fat removed1½ pound
Fresh lemon juice½ cup
White wine vinegar2 tablespoons
Fresh sliced lemon peel½ cup
Chopped fresh oregano (or 1 teaspoon dried oregano), crushed3 teaspoons
Medium onion, sliced1  
Salt¼ teaspoon
Black pepper to taste
Paprika½ teaspoon
  1. Directions
  2. Place chicken in 13 x 9 x 2-inch glass baking dish.
  3. Mix lemon juice, vinegar, lemon peel, oregano, and onions. Pour over chicken, cover and marinate in refrigerator several hours or overnight, turning occasionally.
  4. Sprinkle with salt, pepper, and paprika.
  5. Cover and bake at 325ºF for 30 minutes. Uncover and bake 30 minutes more or until done.
