Ingredients and Preparation

Olive oil2 teaspoons
Juice of ½ a lemon
Salt¼ teaspoon
Freshly ground pepper to taste
Halibut, cut into 2 filets¾ pound
Lemon wedges
  1. Directions
  2. Combine garlic, olive oil, lemon juice, salt, and pepper in a small bowl. Rub mixture all over halibut and let sit for a few minutes while grill heats up.
  3. Prepare grill. Cook fish on grill coated with cooking spray for about 5 minutes on each side, until fish is cooked through. Serve with lemon wedges.

Slice ½ zucchini and ½ yellow squash into long, thin strips. Brush with 2 tablespoons olive oil and a dash of salt. Grill for 2-3 minutes on each side.

Wash and scrub 2 baking potatoes (such as Russet). Prick several times with a fork and then cook on high heat in the microwave for 8-10 minutes, flipping potatoes over half-way through. Serve with low-fat sour cream or a margarine spread and top with fresh chives.
